Jamaican Flitters


Yes we at it again using simple ingredients around us.

First thing first you will need

5 cups of Flour
2 tsp Salt (optional)
2 tsp Baking powder
2 cups of Carrot
3 - 4 cups of codfish/sailfish
1/2 cup of hemp seed
1 tsp of Old Bay seasoning 
1 tsp of ginger 
1 tsp of garlic
1 tsp of paprika 
1 cup of onion
1/2 cup of scallion 
1 cup of bell peppers 
2 1/2 cup of water
4 cups of olive oil or whatever cooking oil you prefer 

Step 1: Boil 5 cups of water so you are able to place your 3-4 cups of codfish. 

Step 2: Place your codfish under some hot water from the pipe this a trick to remove the majority of the salt. Another way to remove excess salt is soaking the codfish in fresh  water for 45 minutes for three or five times.  You can pinch the codfish and taste to see if you like the amount salt is left on the codfish. Again, you have the choice of how you would like your codfish to be unsalted. 

Step 3: Place the codfish in boiling water and remove water after 20 minutes, then replace water and let it boil for 15 minutes. Once you have done this strain water from the codfish and let it cool for 10 
 before distributing it into small parts. 

Step 4: Place shredded codfish aside in a bowl.

Step 5: Add all dry seasoning in a bowl and mixed until all dry ingredients come toone, thenn add water and continue to mix until mixture comes to a pancake batter. 

Step 6: Add carrot, bell peppers, onion, scallion, and codfish tothe mixturee and mixed until ingredients distribute evenly. 

Step 7: Add oil to pan and let itwarm, thenn use a big spoon to place mixture evenly in pan. Once each fliter becomes crispbrown, turn turn to the next side to fry evenly for 4 minutes. Continue until mixture is finished frying.
