Coconut Stew
Ingredients
2 chopped
Onion
2 Tomatoes
½ cup
of each Bell Pepper (green, red and orange)
1 cup of chopped carrot
4 cups
of diced Jamaican sweet potato or 2 huge Jamaican sweet potato
½ cup
of chopped Scallion
1 teaspoon Simply organic seasoning (choose the spices you prefer) click
eg. Garlic pepper, Grilling Seafood, ginger, all spice, paprika, chipolatas powder,
cayenne,
2 lb of Shrimp click
½ cup of Olive Oil click
Thai Kitchen Organic coconut milk (unsweetened)
1 lb of spinach
1 lb pop chow
½ lb parsley
½ lb cilantro
2 cup of corn frozen or can
2 cup of green peas frozen or can

½ cup of water

Step
1: Clean shrimp if it is not clean
Step 2:
Chopped all ingredients that are required to be chopped
Step 3:
Warm the olive oil in a pot for 3 minutes
Step
4: Add Thai Kitchen Organic coconut milk in oil and stir for 1-2 minutes and
leave to boil
Step
5: Once the olive oil and coconut are simmered add 2 tomatoes and cover to
simmer for 3-5 minutes under low flame
Step
6: Stir and add all dry seasoning such as 1 teaspoon Simply organic seasoning
(choose the spices you prefer) click
eg. Garlic pepper, Grilling Seafood, ginger, allspice, paprika, chipolatas powder,
and cayenne then stirs for 2 minutes.
Step
7: Add 1 cup of chopped carrots and 4 cups of diced Jamaican sweet potato or 2
chopped huge Jamaican sweet potato and leave to simmer for 8 -12 minutes
Step
8: Add scallion, bell peppers, onion, corn, and peas for 8 minutes
Step
9: All spinach, pop chow, parsley, and cilantro
Step
10: Shrimp (make sure potatoes are soft)
